This summer our peaches have been extra sweet and juicy so I’ve been grabbing one for a snack, putting them on pizza (yes! so yummy) and last weekend, in a cobbler. To save time I bought ready made biscuits for the topping and it was delicious! For the long weekend ahead, try this recipe out for brunch or enjoy as dessert with some vanilla ice cream!
Easy Peach Cobbler
1/2 cup sugar
3 teaspoons of cinnamon (1/2 for peach mixture and 1/2 for biscuits)
1 tablespoon of arrowroot powder or cornstarch
5 cups of peaches or 2.5 pounds
Place the first three ingredients in a medium size saucepan and simmer until thickened and bubbly. Add the cut up peaches (I leave the skin on) and simmer until the fruit cooks down a bit. Place your biscuits on top of the peach mixture and bake in a preheated over for 25 to 30 minutes or until golden brown. Serve warm as is or with a scoop of your favorite vanilla ice cream!
